Erected for the first time in the 10th century, during the reign of the Carolingians, to protect the road connecting Brignoles to Aix-en-Provence.
Regularly enlarged and consolidated, this fortress protected the Olliérois for more than six centuries. At the end of the 17th century, a new castle was built by the Felix family, one of the great families of Provencal nobility.
Begun in 2003, the revival of Château d’Ollières is the success of two men: Hubert Rouy and his son Charles. They share the same understanding of the land, the same high standards for their wines, the same respect for the history and heritage of their estate. In a word: the same passion!

HARVEST | Made from traditional grape varieties of Provence rosés, this rosé, characterised by its finesse and elegance, is harvested at night between 3 and 7 a.m. |
VINIFICATION | This nocturnal harvest, coupled with significant refrigeration power in the cellar, allows them to let the grapes macerate for a few hours in the press after destemming and crushing. Once the grapes are pressed, fermentation takes place in temperature-controlled vats. A work of the lees at the end of fermentation is carried out in order to bring roundness and fat to our rosés. Protected to the maximum from oxygen by carbon dioxide in all operations until bottling. |
