The cellar is completely up to date and allows winemaking without added sulfites in a neutral and controlled atmosphere.

VINEYARD	22 hectares
TYPICAL BLEND	60% Syrah 20% Grenache 20% Carignan
VINES	Carignan wines for over 100 years, Grenache with roots plunging into mineral soil, the essential Syrah, Roussanne, Grenache and Mourvèdre. They are planted on marl sandstone and limestone soils.
HARVEST	Hand-picking when maturity is optimal. Sorting when necessary.
ŒNOLOGIST	Laboratoire Dubernet - Benoit Huchin
VINIFICATION	Destemming then fermentation for 4 weeks, accompanied by regular pumping over. Rigorous control of temperatures during fermentation which take place without added sulphites.
AGEING	In temperature-controlled vats under neutral atmosphere.
