The personal secretary of King Louis XIV, Phelippeau de Pontchartrain, acquired these hunting estate located near the forests of the Royal Abbey of Fontevraud and with excellent land for vineyards. The domain recently celebrated its 350th anniversary and is reinforced with modern facilities which allow them to diversify the methods of winemaking and to enhance this magnificent terroir.

VINES | Planted on clay-limestone soils of tuffeau (sedimentary stone of the Turonian formed 90 million years ago). Use of natural compost, pursuit of beautiful, naturally healthy bunches with ventilation by tight disbudding and leaf stripping. Strict controls are imposed by the Sustainable Agriculture Terra Vitis and High Environmental Value labels, and now by the Organic Agriculture label. |
HARVEST | Manual harvest in perforated boxes in 1 or 2 lots to select the largest and freshest bunches. |

VINIFICATION | Direct pneumatic pressing on receipt, slow and gentle in order to extract the finest juice. Cold and malolactic fermentation done in vats, then casking. |
AGEING | After blending, the wine is aged in barrels of 3 to 5 wines to acquire velvety texture without adding woody notes. The draw is made in Spring, followed by a rest on slats for two and a half to three years. |
